Most salads collapse in transit. This one is built in layers with the dressing carried separately, so the beans stay firm, the chips stay crunchy and the whole thing survives a day in a cooler or a mini-fridge. Entirely meat-free, so it clears more borders and needs less chilling than the meat version.

- Black beans → kidney, pinto or any canned bean you can find locally.
- Coriander → parsley, or leave it out; sold as 'cilantro' in the Americas and 'dhania' in East Africa and South Asia.
- Tortilla chips → any salted corn or potato crisp, or toasted flatbread torn into pieces.
Preparation steps

Shake the lime juice, olive oil and cumin together in a small sealed bottle. This is your dressing — it travels separately.

Layer the container from the bottom up: beans first, then sweetcorn, then onion, then tomato.

Add the shredded lettuce on top so it never sits in liquid.

Seal and chill. Carry the chips and the dressing bottle outside the container.

At the campsite or hotel room, pour on the dressing, add the chips and coriander, and shake or toss.

Eat immediately once dressed — the chips have about ten good minutes.
Travel tips
- Layer order is the whole trick: heavy and wet at the bottom, leaves at the top, crunch carried separately.
- A wide 1.5 litre container with a clip lid beats three small tubs — one lid, one wash, no leaks.
- Buy the chips at your destination; they are mostly air and get crushed in transit.
- This scales cleanly to four people, which makes it the best-value shared meal in the collection.
Cooler storage guidance
- Undressed, it keeps 2 days at or below 4°C / 40°F. Dressed, eat within an hour.
- Keep the container upright and away from melt-water — soggy lettuce is a drainage problem.
- Do not freeze. The tomatoes and lettuce will break down completely.
- In a hostel mini-fridge, label the container with your name and the date you made it.
Food safety advice
- Wash lettuce and tomatoes in safe drinking water only, and dry them well before packing.
- Rinse canned beans thoroughly to cut sodium and remove starchy liquid that spoils quickly.
- Discard any leftovers that have sat above 4°C / 40°F for more than four hours.
- Cut produce is a high-risk food once chopped — chop as late as you reasonably can.
