Set out everything you need and wash your hands — clean hands and a clean surface matter more on the road than in your own kitchen.

Prepare the large tortillas and keep it on a dry board so the base does not go soggy.

Mix or layer the filling: sweet potato, mashed, black beans, drained, cooked brown rice, seasoning as you go and tasting before you build.

Spread any wet element in a thin layer to the edges only — a dry centre keeps the bread intact for hours.

Roll or press the handheld tightly, then wrap firmly in baking paper or foil so it holds its shape in a bag.
